Sanitize entity profiles: tone-neutral public text, ai_notes for coaching guidance

- Mr. Douglas: moved sensitive coaching notes to ai_notes frontmatter,
  replaced 'Communication Style' section with neutral 'Working With' section
- All 19 profiles: replaced MrC attribution with Hawk Collective 2890
- ai_notes field is frontmatter-only (not rendered by Quartz)
